We are very pleased to be able to bring a new and innovative product to our range. Little Doone Foods have produced a range of Balsamic dressings, both sweet and savoury, ranging from strawberry to whisky through garlic.
Yorkshire Crisps are made locally, at Wales, near Rotherham. There are 10 varieties, and we attempt to stock all of them. Currently they are priced at £2-25, or 4 for £8-50 (correct as at October 2014)
Scarlett and Mustard produce a range of dressings. Currently we stock nine of them. They are named after members of the family who produce them. The Colonel's Poppy Seed Dressing is produced in memory of two family members who served in world War One. One pound is donated to the poppy appeal for each bottle sold. The company also produces Truffle oil, and several curds.
Ringden Farm farm orchards and produce apple juice. They bottle a range of single variety apple juices, of which we stock ten, ranging from sweet to dry. Currently on sale at 3 for £9-00 (October 2014).

Our new products
It seemed as though we would never get there, but we are now fully open in our new stall.
This has enabled us to offer many new products, in addition to the ones we have always had. We are offering tasters of different products every day to introduce them to people.We now offer nearly 70 types of cheese. Most of these are from the north of England, but we have a small number from further afield.
"Savvy" tahini spreads are made in Sheffield, and are free from refined sugar and artificial ingredients.
Granny Mary's potted meat is available in pre-pack jars and loose, weighed out.
A much bigger range of Birdhouse teas is now available.

Expansion
It has been some time since we last posted, but a lot has been going on. We celebrated our Jamie's 21st birthday by getting him a cake from Cakelicious, just along the aisle. It was excellent. We definitely recommend Chris's cakes.
We have decided to take the opportunity to extend our stall. This means we will be moving into number 140 next door. There are two new signs to be painted as the stall is also a corner unit like 139. We will double our display and service space.
Market management allowed us to use a vacant unit to do the signwriting work.
Some of you may have seen the Moor Market display in the shop window. We were happy to be a part of this important promotion.
We took the opportunity to look for some new lines when we visited Sharrow Market. There were a number of new ideas, details will be posted later.
Later on, we took a day off and went to Nantwich Show. Among other things, Nantwich hosts the biggest cheese show in Europe. This gave us the opportunity to try out potential new products.
Maintenance staff have been doing as much of the plumbing and electrical work as can be done in advance in number 140. This left us ready for the major part of the project.
The wall dividing 139 from 140 was taken down over the Bank holiday weekend. The electrical and plumbing works were done at the same time. This means that we now have the chance to start getting ready.
The new display fridge was delivered on Wednesday and maintenance put the newly painted signs up on Thursday.
We opened up the double unit for the first time on Saturday (August 31st), but there is still some work to do. Once the counter is installed across the end of 140, and the shelves put up, we will be fully ready.

Cooking for the holidays.
On Tuesday August 12th, Su will be presenting a cookery demonstration of simple baking for children. This will include simple recipes to try out with your children during the holidays. There will be chance to taste the results and ask questions. The demonstration starts at 11-00a.m.

Goat Milk
In response to customer demand, we are now stocking goat milk. Litre cartons of pasteurised goatmilk are currently in stock. Many people who cannot tolerate cows' milk can digest goats' milk. If the demand continues, it will become a regular feature of our range.

Moor Market Tea
Here are S & J's Pantry we thought that the new Moor
Market was worthy of its' own special brew. We spoke to the nice people at Birdhouse Teas, and after a little experimentation, a new brew was born.

Goatwood Dairy Cheeses
Goatwood Dairy is a small artisan cheese maker near Wragby in Lincolnshire. They produce four cheeses from their own goats' milk.
Langton: soft fresh cheese.
Bardney: soft blue cheese.
Kingthorpe: white mould-ripened cheese.
Apley: white, rolled in ash and mould ripened.
All are lovely with a nice crusty loaf, like those sold by Seven Hills Bakery on the pop-up stall.

Baking Demonstration
On Tuesday April 15th, Jon. will be showing how to make pancakes, pikelets and scones in the Demonstration kitchen.

We are pleased to announce that we have added three new cordials to our popular Mr Fitzpatrick's range. They are:

Food Hygiene
S & J's Pantry is pleased to announce that following the inspection by the food hygiene service, we have been awarded a rating of 5 for hygiene.
New Fair Trade Lines
Following the success of Fair Trade Week, and interest it generated, S & J's Pantry have added some new lines to the fair trade range.
The first additions are three new fair trade coffees. From different countries in Africa, they are all from Arabica beans and are medium strength.
A new departure for us is the Divine chocolate range. Made from Ghanaian cocoa beans, there are a number of different varieties.

Recipe for Quiche.
Quiche
recipe.
Equipment:
6 inch flan tin, mixing bowl, polythene bag or cling film
Ingredients:
Pastry.
225g (8oz.) Dove's Farm plain flour,
113g (4oz.) Longley Farm Jersey Butter.
Small amount of milk, water or milk and water mixed.
Beans or peas for blind baking.
Filling.
1 small head of broccoli
2 rashers of smoked bacon, roughly chopped.
1 small onion, chopped.
2 small eggs, beaten.
200ml (1 tub) Longley Farm crème fraîche
75g (3 oz.) S & J's specially selected mature Cheddar, grated.
Salt and pepper seasoning.
Method.
Cut the butter into small pieces and rub it into the flour. When the texture is like fine breadcrumbs add enough liquid to bring the mix together into a lump. It should not be sticky.
Put the pastry into a bag in the fridge to allow it to rest.
Pre-heat the oven to 180°C/ gas mark 4/ 360°F.
Roll out the pastry on a floured surface.
Line the quiche tin with baking parchment.
Place the pastry into the tin, press it well into the corners. Trim round the tin with a knife.
Add a layer of beans or peas to hold the pastry flat.
Bake in the oven for about 15 minutes, or until golden brown.
Boil the broccoli for five minutes and drain them into a bowl.
Fry the chopped bacon and for about 5 minutes, until the onion is soft.
Place the cooked bacon and onion with the broccoli in the bowl.
Add the eggs, crème fraîche and half the grated cheese. Mix together, and add salt and pepper to taste.
Add the mix to the pastry case, leave a small gap at the top to allow the mixture to expand when it is cooked.
Sprinkle the remaining cheese on top.
Bake for 25 -30 minutes until golden brown.
Serve Hot or Cold as liked.
The recipe can be varied with different cheeses, meats and vegetables.
The quiche illustrated used salmon instead of bacon.

A slight snag.
Su's cookery demonstration on Tuesday hit an unexpected snag. The brand new, purpose built demonstration kitchen does not have an oven!! Yes, you read right, there is no oven in the demonstration kitchen. We could not believe it either. There is a bain-marie, a fridge (well, four refrigerated drawers actually), an induction hob, an induction wok and a griddle (although the griddle does not seem to work at the moment!)
This gave us a difficult decision, as it is not possible to make quiche without an oven. (Or at least, not as far as we know)
We considered the possibility of making the quiches at home and just showing the steps in the process. This would have been a seemingly endless series of "Here's one I prepared earlier", and we thought that it would be a poor cookery demonstration if all she did were to boil vegetables, fry bacon and mix a few things together.
The answer was to spend our own money(!) and buy an oven. Fortunately T.J. Hughes round the corner were selling suitable table top ovens so the full demonstration will go ahead as planned.

New guest cheese.
Having stocked the Comté as guest for a few weeks, we decided that it was time for another. This time, we have moved our search from France to Wales.
The Aberwen cheese is made on the Bodnant estate using milk from the Conwy Valley. It is made to a 300 year old recipe and has a dense, crumbly texture. It is a traditional cloth bound cheese. The flavour is strong with notes of citrus. Aberwen means White Estuary in Welsh.

Cookery Demonstration.
Su. from S & J's Pantry, will be giving a cookery demonstration on Tuesday March 18th. This will take place at 11-00a.m. in the demonstration area near to Customer Services at the centre of the market. The theme of the demo.will be quiches. Come along and see how easy it is to bake delicious food. Give your mother a treat on Mothering Sunday.
St Patrick's Day: 17th March
Why not celebrate St. Patrick's Day by baking some traditional soda bread? There are many variants of the basic recipe, but here is one to try.
170g/6oz plain flour
½ tsp. Salt
½ tsp bicarbonate of soda
290ml/ ½pint buttermilk
Method.
Preheat the oven to 400 F/200 C/ Gas mark 6
Tip the flour, salt and bicarbonate of soda into a large mixing bowl and stir.
Make a well in the centre and pour in the buttermilk, mixing quickly with a large fork to make a soft dough. You may need to add a little milk/buttermilk/water if the dough seems too stiff.
Turn onto a floured surface and knead briefly.
Form into a round and flatten slightly before placing on a floured baking sheet.
Cut a cross on the top and bake for bout 30 minutes, until the loaf sounds hollow when tapped. Cool on a wire rack.
The ratio of white to wholemeal flour can be varied to taste.
All the ingredients, apart from the salt, can be purchased at S & J's Pantry.

Pancake Day
Pancake day or Shrove Tuesday is just around the corner, and you will want your pancakes to stand out. Why not make them with fine organic flour, and serve them with organic maple syrup? Alternatively, you could use Sheffield-made jam from Greenside Deli, or cheese an pickle. We really recommend the Lincolnshire Poacher, but Comté or Mature Cheddar would do as alternatives.

currebntly, our guest cheese is Comté, from the Franch-Comté region of Eastern France. A strong yet cheese, it is made from milk fed on grass or Hay, no silage is allowed. Only milk from Montbeliarde Cattle or French simmental (or cross breeds between the two) can be used.
This quality product is available whilst stocks last at the price of £1-50 per 100g.

Yeast.
A number of customers have asked us about supplying fresh yeast to go with the flours which we stock. We are happy to announce that we now stock fresh yeast at a price of 40p per 100g. We usually pack this in 30g and 60g packs (12p and 24p), but are happy to weigh out any amount greater than 30g.
As a guide, 30g is slightly more than one ounce, and this is sufficient to raise 3 pounds (1.5kg) of flour.
